Ingredients

  • 1/4 cup salad oil
  • 1/2 lb. white onions, peeled
  • 1 clove garlic, finely chopped
  • 3 lb. broiler fryer cut up
  • 2 tbsp. flour
  • 1 cup dry white wine
  • 1 tbsp brandy
  • 1 tsp salt
  • 1/8 tsp. pepper
  • 1 tsp. dried thyme leaves
  • 2 tbsp. finely chopped parsley
  • 1/4 lb. fresh mushrooms sliced
  • chopped parsley for garnish

Preparation

Step 1

In large, heavy skillet slowly heat oil. Sauté onions and garlic until golden. Remove and set aside.
Add chicken; sauté until golden brown on all sides - remove and set aside.
Drain all but 2 tbsp of fat; stir in flour until smooth.Gradually stir in wine. Add brandy, salt, pepper, thyme, and 2 tbsp chopped parsley along with chicken and onions; simmer, covered 30 minutes or until chicken is tender. Add mushrooms; simmer for 10 minutes.
Put chicken, with sauce, on warmed platter and sprinkle with parsley. Serve and enjoy.
