Ingredients
- 1 t salt
- 1/2 t brown sugar
- 1/4 t black pepper
- 1/4 t sage
- 1/4 t rosemary
- 1/4 t thyme
- 28 oz pineapple chunks
- 3 lbs pork loin
- 2 t olive oil
- 2 t balsamic vinegar

Preparation
Step 1
Combine all dry ingredients with one teaspoon olive oil and enough pineapple juice to make a light paste. Spread over pork, cover and let stand for 30 min.
Sear pork on all sides. When seared add the two tablespoons of balsamic vinegar and coat well. Place roast on baking pan and cook for 30 min at 350 degrees. Remove the roast and add the pineapple. Coat pineapple with pan juices and return to oven and cook about 30 more min until internal temp is 145.
