White Chocolate Brandied Cherry Bread Pudding 1 Picture

Ingredients

  • 1.5 cups half and half
  • 3 egg yolks
  • 2 tbs sugar
  • 4.5 oz white chocolate, chopped
  • 1/2 tsp vanilla
  • 0.75 cup brandied cherries, drained
  • white bread

Preparation

Step 1

1. Heat half and half to boiling; add white chocolate and whisk until melted.
2. Combine yolks with sugar and vanilla. Whisk white chocolate mixture into eggs in a slow stream.
3. Grease mold (loaf pan works). Slice bread to fit mold. Pour enough custard over to soak bread. Sprinkle brandied cherries over this layer.
4. Repeat layers of bread, custard, and cherries until the mold is filled.
5. Cover with greased aluminum foil and bake at 325F until set--times will vary according to size of mold. Bread pudding is done when a knife inserted in the center pulls out without any liquid egg on it.
5. Serve warm, with dark chocolate sauce, if desired.
