- 1 package seitan, or 2 cups homemade seitan
- 1 tablespoon brown rice syrup
- 2 teaspoons red wine vinegar
- 2 teaspoons stone ground mustard
- 2 teaspoons extra virgin olive oil
- 2 teaspoons fresh rosemary, finely chopped
- 1/2 teaspoon dried thyme, plus dash
- 1/2 teaspoon sea salt, plus dash
- 1/2 teaspoon ground pepper, plus dash
- 1/2 cup almond meal or toasted, ground walnuts
- 1/3 cup, plus 1 cup organic whole wheat bread crumbs
- 2-3 tablespoons neutral tasting oil (refined coconut oil preferred)
- 4-6 leaves fresh basil, finely chopped

Directions:
In a large food processor, pulse the seitan, brown rice syrup, vinegar,
mustard, oil, rosemary, thyme, sea salt and pepper until well combined.
Add almond meal and 1/3 cup breadcrumbs.
Place remaining cup breadcrumbs in a bowl and combine with dash sea
salt, pepper and dried thyme
Form seitan mixture into small patties and dredge in the breadcrumbs.
Cook the patties for about 4 minutes, or until they look dried and crispy.
Serve warm and top with fresh basil.
