Ingredients
- 1 tsp paprika
- 1/2 tsp freshly ground black pepper
- 1 3-4 lb beef eye of round roast

Preparation
Step 1
1. Preheat oven to 500°
2. In small bowl combine paprika and pepper, rub over both sides of roast.
3. Let roast stand at room temperature at least 15 minutes.
4. Place the roast in the preheated oven. Reduce the temperature to 475°.
5. Roast for seven minutes per pound then turn off the oven and let the roast sit in the hot oven for 2 1/2 hours. Do not open the door all all.
6. Carve into thin slices to serve
