  • 1 cup crushed tortilla chips
  • 3 tablespoons butter, melted
  • 2 (8 ounce ) packages cream cheese, softened
  • 2 eggs
  • 1 (4-ounce) can diced green chilies, drained
  • 1 fresh jalapeno pepper, seeded and diced
  • 4 ounce shredded colby cheese
  • 4 ounce shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • chopped tomatoes
  • chopped green onions
  • diced black olives

Preparation

Step 1

Preheat the oven to 325 degrees F. In a medium bowl, combine the tortilla chips and butter. Press into the bottom of a 9-inch spring form pan. Bake 15 minutes, remove from the oven, leaving oven on.

In a large bowl, blend the cream cheese and eggs. Add the green chilies, jalapeno, Colby, and Monterey Jack. Pour over the crust and bake for 30 minutes. Do not overcook. Remove from the oven and cool in the pan for 5 minutes.

Run a knife around the inside edge and remove side from the pan. Spread the sour cream over the top and decorate with tomatoes, green onions, and olives. Serve with tortilla chips.
