Old Fashioned Pancakes

Ingredients
- 2 eggs
- 1 cup of cake flour
- 1 1/2 cups of milk
- 1/2 stick of melted butter
- 2 tbsp of castor sugar
- 1 tsp of salt
- 2 tsp of baking powder
- Ground cinnamon
- Brown sugar
- Lemon juice
Details
Preparation
Step 1
Combine all the ingredients in a large mixing bowl and whisk them together.
Step 2: Place a non-stick frying pan on a medium high heat and once hot ladle in roughly 3 tbsp of batter and evenly spread it around the pan.
Step 3: Cook for about a minute, until you start to see little air bubbles and then flip it over for another minute.
Step 4: Place the pancakes on a plate and sprinkle with ground cinnamon, a tsp of brown sugar and a squeeze of lemon juice and then starting at one edge roll them up.
I love to serve mine with fresh fruit, usually a diced banana and a handful of fresh strawberries topped with a sprig of mint and garnished with icing sugar and drizzled in maple syrup.
