Ingredients
- 1 1/2 c water
- 2 T turbinado sugar
- 1 c loosely packed mint leaves
- 4 c watermelon cubes
- 1 cucumber, peeled, seeded and chopped
- 1/2 c pomegranate or cranberry juice

Preparation
Step 1
Combine water and sugar in a small saucepan. Bring to a boil and add mint leaves. Remove from heat; let stand 5 mins. Strain into ice cube trays. Freeze 3 hours.
In a blender combine watermelon, cucumber, juice and mint-flavored ice cubes. Blend until smooth.
