Do not buy yams - they are too soft to french fry!

Peel and slice ran sweet potatoes in 1/2 in slices. Soak the slices in ice water for 30 minutes, drain, and dry on paper towels. Fry in hot oil a few at a time, for about 5 minutes.

Serve plain or sprinkled with salt or sugar.
