Ingredients

  • 1 cup atta/wheat flour
  • 1 cup maida/white flour
  • 1 tsp ajwain/carom seeds
  • 1 tsp crushed black pepper (optional)
  • 1 tsp cumin seeds/jeera (optional)
  • 1/4 tsp baking soda
  • 2 to 3 tbsp oil or ghee (i used sunflower oil)
  • 1/2 to 3/4 cup water
  • salt to taste
  • oil for frying

Preparation

Step 1

1.sieve the wheat flour, white flour, baking soda and salt together.
2.add the ajwain.
3.mix the carom seeds with the rest of the sieved flours.
4.add the oil or ghee.
5.add water and start to knead the dough.
6.the dough should not be soft, but firm.
7.take medium sized balls from the dough and roll them on a dusted flour.
8.with a serrated knife make criss cross patterns on the rolled dough.
9.remove the diamond shaped patterns and deep fry them in hot oil till crisp and golden browned.
10.drain on paper napkins.
11.once the crispies cool down, then store in an airtight box.
