Ingredients

  • 1 graham cracker crust(baked)
  • 3 eggs(yolks only)
  • 1 can sweentened condensed milk
  • 1/2 cup lime juice(1o to 12 key limes or 4 to 6 persian limes)or bottled key lime juice
  • 3 tblsp water
  • few drops green food colring(opt)
  • 1 recipe meringue for pie or
  • omit meringue and use whipping cream

Step 1

1. prepare crust according to directions on crust
2. for filling;in medium bowl beat egg yolks with wire whisk or fork.
Gradually whisk in sweentened condensed milk and lime juice ,water and food coloring if desired.Mix well(mixture will thicken)
3.spoon filling into baked shell. baked for 15 min. at 325. meanwhile make meringue. remove pie and increase temperature to 350. spread meringue over hot filling;seal to edge.bake in oven for 15 minutes. cool on wire rack for 1 hour. chill for 3 to 6 hours before serving.

WHIPPED CREAM TOPPING
prepare as above,except omit meringue; set aside egg whites for another use. spoon filling into baked crust. bake at 350 for 25 minutes. cool on rack for 1 hour.cover and cool for 3 to 4hours. meanwhikle make whipped cream for topping. spread over cooled pie and serve
