Ingredients
- 2 15 oz cans black beans rinsed and drained
- 1 17 oz can whole kernel corn drained
- 2 large tomatoes seeded and chopped or 1 pint quartered grape tomatoes
- 2 large avacados, 1 1/2 peeled and chopped, preserve the rest for garnish
- 1 purple onion chopped
- 1/8 to 1/4 cup fresh chopped cilantro (reserve a few sprigs for garnish)
- 3 to 4 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp salt
- 1/2 tsp pepper

Step 1
Combine all ingredients except reserved avacado and cilantro in a large bowl.
Cover and chill.
Garnish if desired with avacado fan and cilantro.
Serve with tortilla chips.
Makes about 6 cups.
