Ingredients

  • 2 15 oz cans black beans rinsed and drained
  • 1 17 oz can whole kernel corn drained
  • 2 large tomatoes seeded and chopped or 1 pint quartered grape tomatoes
  • 2 large avacados, 1 1/2 peeled and chopped, preserve the rest for garnish
  • 1 purple onion chopped
  • 1/8 to 1/4 cup fresh chopped cilantro (reserve a few sprigs for garnish)
  • 3 to 4 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

Combine all ingredients except reserved avacado and cilantro in a large bowl.

Cover and chill.

Garnish if desired with avacado fan and cilantro.

Serve with tortilla chips.

Makes about 6 cups.
