  • 1/2 1/2 1/2 cup creamy peanut butter
  • 1/2 1/2 1/2 cup sugar
  • 1/2 1/2 1/2 cup brown sugar
  • 1 1 1 egg
  • 1 1 1 teaspoon vanilla extract
  • 1 1/2 1 1/2 1/2 cups flour
  • 1/2 1/2 1/2 teaspoon baking soda
  • 1/2 1/2 1/2 teaspoon salt
  • 1/2 1/2 1/2 teaspoon cinnamon
  • 1 1 1 cup diced apple

Preparation

Step 1

In the bowl of a stand mixer, cream together the butter and both sugars. Add in egg and vanilla extract and beat well. In a medium bowl, combine flour, baking soda, salt, and cinnamon. Gradually add flour mixture to stand mixer while it's turned on low speed. Stir in diced apple. Drop by rounded tablespoons onto an ungreased cookie sheet. Press a criss-cross pattern on the tops with a fork, if desired, and bake at 375 for 12-14 minutes. Cook on wire racks and store in an airtight container.
