Ingredients
- 1 LB dry pasta (rotini or farfalle)
- 1 LB frozen corn, thawed
- 1 can sliced black olives (3.8oz)
- drained
- 2 red bell peppers, diced
- 1 1/2 C sliced scallions
- 3 TBL chopped garlic
- 2/3 C olive oil
- 1/3 C fresh lime juice
- 1-2 TBL white wine vinegar
- 1 TBL fresh oregano or
- 2 tsp dried oregano
- 1 tsp each ground cumin & coriander
- 1/4 tsp cayenne pepper
- kosher salt & black pepper to taste
- 2 avocados, peeled, pitted & diced

Step 1
PREPARE pasta according to pkg. directions
drain & toss w/ corn, olives, bell peppers, scallions & garlic in lg. bowl
WHISK togth. oil, lime juice, vinegar, oregano, cumin, coriander &
cayenne in bowl.
pour over pasta-vegie mix. & toss to coat
season pasta salad w/ S & P
gently stir in avocados just before serving
