Ingredients
- 1 fresh pineapple, peeled and cored
- 1 (16- to 18-oz.) package extra-firm tofu, drained and cut into 1 inch cubes
- 3 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon Jamaican jerk seasoning
- 1/4 teaspoon salt
- 1 clove garlic, pressed
- 8 (12-inch) metal OR bamboo skewers
- 1/2 of a small red onion, cut into thin wedges
- 1 large bell pepper (color of your choice), cut into 1-inch pieces
- Non-aerosol cooking spray

Preparation
Step 1
Cut pineapple into 1-inch cubes reserving any juice; place in a bowl, cover and chill until needed. Place tofu in a large zipper-top plastic bag. In a small bowl combine reserved pineapple juice, lime juice, olive oil, jerk seasoning, salt and garlic; pour over tofu. Seal bag and turn to coat; refrigerate for at least 8 hours and up to 24 hours, turning bag occasionally. Preheat grill to MEDIUM. Drain tofu, reserving marinade. Alternately thread tofu, pineapple chunks, onion wedges, and bell pepper pieces onto the skewers; lightly coat with cooking spray. Grill skewers, uncovered, for 8 minutes or until peppers are tender-crisp, turning to brown tofu evenly and brushing occasionally with marinade.
SERVING SUGGESTION: Baked sweet potatoes (nuke in microwave to keep your kitchen cool) and steamed green and yellow (wax) beans.
GLUTEN FREE: Make sure jerk seasoning is gluten free.
