- 1 cup uncooked quick-cooking rolled oats
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 3/4 cup butter
- 1 egg

Lightly grease 40 tartlet pans. Preheat the oven to 400 degrees.
In the bowl of a food processor, combine the rolled oats, flour and sugar. Slice the butter into 1/2-inch chunks and add to the dry ingredients. Process until the mixture resembles coarse crumbs. Add the egg and mix until the dough hold together; if necessary, add water 1 teaspoon at a time.
On a work surface, roll the dough into a strip and cut into 40 equal pieces. Press the dough, using your thumb dipped in flour, into the tartlet pans, making the shell thicker at the edges than at the base. Place tins on a baking sheet. Bake for 12 to 15 minutes until pale golden. Cool and remove from the pans by tapping on the bottom of each mold.
