Ingredients

  • 1/2 c raisins
  • 1/2 c sifted flour
  • 1/2 c sugar
  • 1/2 t salt
  • 1 t baking powder
  • 1 t cinnamon
  • 1/4 t nutmeg
  • 1 egg
  • 1 t vanilla extract
  • 1/4 c butter, melted
  • 3 c quick oats

Preparation

Step 1

1. Heat oven to 350. Line two cookie sheets with parchment. Place raisins in a small bowl, cover with water and let soak for 15 mins.
2. In a large bowl, sift together flour, sugar, salt, baking powder, cinnamon and nutmeg. Stir them until evenly blended.
3. Set aside 3 T of water from bowl of raisins, then drain raisins, discarding the remaining water.
4. Whisk the egg in a medium bowl. Stir in vanilla extract, melted butter and reserved raisin water.
5. Make a well in the flour mixture, then pour in the egg mixture and blend well. Use a spatula to stir in the oats and raisins. Note: the dough will be lumpy.
6. With a tablespoon place portions (1 1/2 T size) of the dough on the cookie sheets, then use a spatula to flatten them slightly.
7. Bake cookies one pan at a time, rotating the pan halfway through, until golden brown, about 16 mins. Let cool on the sheet 3-4 mins, then use a spatula to transfer to a wire rack to cool completely.
