Ingredients

  • 6 very ripe bananas
  • 1/2 Cup vegetable oil
  • 1 stick butter (1/2 Cup)
  • 2 Cups sugar
  • 4 eggs
  • 3 Cups flour
  • 2 tsp. baking soda
  • 21/2 tsp. PENZEYS CINNAMON
  • 1/2-11/2 tsp. GROUND CLOVES (the recipe calls for 11/2 tsp. but our cloves are so strong we only used 1/2 tsp.)
  • 1/2 tsp. salt
  • 11/2 Cups raisins
  • 11/2 Cups chopped nuts (pecans or walnuts)

Preheat oven to 250°. In a mixing bowl, combine the bananas and oil and blend well (Marjorie uses her food processor). In a separate bowl, cream together the butter and sugar until fluffy. Add the eggs and beat well. In a third bowl, combine the flour, baking soda, CINNAMON, CLOVES and salt. Add the dry ingredients to the egg mixture, alternating with the banana mixture. Mix well. Stir in the raisins and nuts. Divide the batter between 2 greased and floured 9x5 or 8.5x4.5-inch loaf pans. Bake at 250° for about 11/2-2 hours (baking the bread at a low temperature for a long time makes a huge difference). At 250° there will not be a big time difference between the smaller and larger loaf pans. The loaves do not rise a lot, but they should spring back when touched lightly in the center and be a nice dark brown color when done.
