Preparation
Step 1
Preheat grill to high, about 400°F, and brush grates with oil.
Combine all the burger ingredients together until seasonings are well dispersed. Divide the mixture into 3 portions and shape into patties.
Place chicken patties on hot grill for about 5 minutes, allowing the burgers to get a good sear so they do not fall apart. Flip the burgers over and grill for another 5 minutes, until the internal temperature of the chicken reaches 165°F.
Toss the slaw ingredients together.
To assemble your burger, generously spread the top and bottom buns with Thai mayonnaise. Place the grilled chicken burger on the bottom bun and top with 1/2 cup of slaw mix. Lean the top bun against your burger for a nice presentation.
Sauté red onion and Thai curry paste in sesame oil for about 5 minutes, then let cool in refrigerator. Once cooled, combine the sautéed onions with the fresh ginger and mayonnaise in food processor. Pulse until smooth.
