This is a great twist on those refreshing summer tomato sandwiches we all enjoy when tomatoes are plentiful and at their ripest.

Ingredients
- 4 Toasted Waffles (I use the round Eggo Waffles)
- 2 Medium Ripe Tomatoes (1 tomato per sandwich)
- 8 oz Fresh low moisture Mozzarella Cheese
- Butter or Margarine
- Fresh Basil Leaves

Step 1
Toast and butter waffles. Slice tomatoes and mozzarella cheese 1/2 inch thick. Layer tomatoes and cheese on waffles and top with Fresh Basil Leaves. Feel free to add a small drizzle of olive oil to the tomatoes for added flavor.
