Ingredients

  • 5 lbs potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 medium onion, minced
  • 2 stalks of celery, minced
  • 3/4 teaspoon celery seed
  • 2 hard boiled eggs
  • 1/2 cup vinegar
  • 1/2 cup water
  • 2 1/2-3 Tablespoons sugar
  • Parsley to taste
  • 6 slices of bacon
  • 2 Tablespoons mayonnaise

Preparation

Step 1

Peel and cube potatoes. Boil until tender. Brown 6 slices of chopped bacon. Boil vinegar and water and add sugar. Set aside. Drain potatoes and add all ingredients (including some of the bacon grease) and refrigerate for at least 2 hours. Add mayo and refrigerate.
