Ingredients

  • 1 1/2 cups raw macadamia nuts (note: ideally you will soak the nuts in water for at least 2 hours and drain, but this step is optional)
  • 1/2 cup canned coconut milk
  • 3 frozen bananas, chopped
  • 8 pitted dates
  • 1 1/2 cups water
  • 1/2 teaspoon pure vanilla extract
  • Pinch of sea salt
  • 1/2 cup Coconut Manna by Nutiva (see article above for where to purchase)
  • 1/4 cup raw cacao powder (such as Navitas Naturals)
  • 1/4 cup raw cacao nibs (such as Navitas Naturals), plus more to taste for sprinkling on top

Preparation

Step 1

Place all ingredients except for the cacao nibs in a high-speed blender (such as a Vitamix) and process until very smooth and creamy.
Pour contents into an ice cream maker, add cacao nibs, and follow manufacture's instructions.
