Ingredients

  • 1 lb lean ground beef
  • 1/2 medium Spanish onion, minced
  • 4 shakes Worcestershire sauce
  • 1/4 tsp allspice
  • 1/2 tsp ground cumin
  • pepper
  • 1/3 lb (minimum) brick of smoked cheddar cheese, cut into 1/2" slices
  • Lettuce for topping
  • 4 fresh, crusty onion rolls

Preparation

Step 1

1. Mix beef, onion, worcestershire, allspice, cumin and pepper in a bowl. separate a quarter of the beef mix. Take a slice of smoked cheese and form the patty around the cheese. Patties should be no more than 3/4 inch thick. Repeat, for a total of 4 patties.

2. Heat a nonstick griddle or frying pan to medium heat. Cook burgers 5-6 minutes on each side. Meat shuould be cooked through and cheese (an instant-read thermometer should register an internal temp of 170 for well done or check the color by cutting into the meat)

3. Add salt to taste (salting beef before cooking draws out juices and flavor). lace in split rolls and top with tomato slices and lettuce. Serve with chips and choice of green salad on the side.
