Maple-Glazed Salmon

- 1/4 cup maple-flavored syrup
- 1 tablespoon soy sauce
- 2 teaspoons grated gingerroot
- 1 teaspoon minced garlic
- 1/2 teaspoon red pepper flakes
- 4 salmon fillets
- 2 tablespoons chopped green onions, optional for garnish

Step 1
Preheat the broiler to 500F.
Combine maple syrup, soy sauce, gingerroot, garlic and red pepper flakes in a small saucepan and mix well.
Cook over medium-low heat, stirring mixture continually, until reduced by half, about 8 minutes.
Arrange fillets in a broiler pan. Brush maple syrup mixture over the fillets.
Broil 4 inches from the heat for 6 minutes. Garnish with chopped green onions, if desired. Serve immediately.

The heat of the oven makes the maple syrup in this recipe caramelize into a glaze. Other syrupy liquids work too, Grandma discovered. She sometimes used honey or corn syrup, both of which lent a touch of sweetness and gave a nice, glazed finish.
