Paula Deen's Corn Salad

This was a delightful salad. Tasty and crunchy. Sure to please your guests for a barbeque or anytime!

Ingredients
- 2 (15 ounce) cans whole kernel corn, drained
- 2 cups grated cheddar cheese
- 1 cup mayonnaise
- 1 cup green pepper, chopped
- 1/2 cup red onion, chopped
- 1 (10 1/2 ounce) bag coarsely crushed Fritos chili cheese corn chips (I could not find these so I mixed 1/2 regular and 1/2 barbeque corn chips)

Step 1
Mix first 5 ingredients and chill. Stir in corn chips just before serving.

I think this salad is A-Maize-Ing. My neighbors and husband loved it. I used fresh corn off the cob because it is in season. You can use the fritos to dip in the salad or out on top. Be sure to put the fritos on right before serving or they will be soggy. You could add a lot of things to this salad like bacon or black beans, but we decided not to mess with a good thing.
Made this for a pitch-in and it went over very well. Good and tasty flavor. The next time I will either add a tad more mayo or not crush the corn chips as much as it turned out a little dry. Or maybe I'll try a different brand of mayo. Either way I will be making this again.

This was so so good! My husband ate it for lunch and dinner three days in a row. Probably not the lightest salad around, but next time I could sub some low-fat mayo to help that. It got better and better the longer it sat in the fridge (I left the crushed fritos separate). Will make again this summer! Update: Made with low fat sour cream instead this time, just as delicious and lots less calories and fat!
I used fresh corn that I steamed. I omitted the onion. I used a red bell pepper. I brought it to lunch today without the chips. But I'll have to try with them tonight. It's yummy and so creamy.
What a great salad. Everyone loved it and asked for the recipe. I'll surely make this one again. It's a great change to the "normal" picnic salads.
This is fantastic!!~ I loved this salad. I served this wiht our burgers and I couldn't keep my fork away from it!!??!! lol This really is a great salad. I loved the addition of the chili cheese fritos, they added so much flavor. Thank you so much for sharing.
I love this recipe! I omit the green bell pepper and add fresh chopped jalapenos! Delicios! I have also added bacon to it!
This was really good - took it for Easter and every bite was eaten. I used one can of corn and one can of Mexi Corn. In place of the Cheddar Cheese, I used the Four Cheese Mexi Blend. I added garlic salt and a 1/4 teaspoon of cayenne pepper, yummy!!!
I made this for New Years Day and this was a HIT!!! The bowl was emptied and I will be making this again for our family functions. A new favorite recipe. Thanks for sharing,
This is an amazing dish and great with bbq! I substituted a bag of frozen corn for a fresher taste and also added cream cheese and a handful of fried onions at the same time I tossed in the corn chips. Fantastic!
This recipe saved my butt at our church picnic today! At about 11:00 last night, I realized that I still hadn't decided what kind of "side dish" to bring, and had run out of time to make anything at all...until I found this recipe. It turns out that there were at least three different macaroni salads and four potato salads on the table, along with a couple of layered salsa dips, but nothing like this...and I think my dish was one of only a few that were completely empty at the end of the picnic. I will definitely make it again, maybe with some hot peppers or pepper jack cheese next time, for a little bit of added kick.
Added tomato and husband likes it w/out chips, kids love it w/them.
I made a couple of little changes - added 1 can of drained, rinsed black beans & i/s/o red onion - I used green. YUM! What a great, easy dish for a BBQ. Thanks!
