Ingredients

  • Shredded carrots (about 1 lb)
  • 2 1/2 c flour
  • 1/2 t baking soda
  • 2 1/2 t cinnamon
  • 1 t salt
  • 1 1/2 sticks butter, softened
  • 1 c packed light brown sugar
  • 1/3 c sugar
  • 2 large eggs
  • 2 t vanilla extract
  • 1 c butterscotch chips
  • 1 c finely chopped walnuts (optional)

Preparation

Step 1

1. Heat the oven to 350. Coat a 9x13 baking dish with cooking spray.
2. In a medium bowl, whisk the flour, baking soda, cinnamon and salt. Set the mixture aside.
3. With a hand or stand mixer set on medium speed, blend the butter and both sugars until pale and fluffy, about 3 mins. Add the eggs and the vanilla and continue beating on medium speed until well blended. Reduce speed to low and add shredded carrots. Mix in the butterscotch chips and if desired, walnuts.
4. Use a wooden spoon to blend the flour mixture into the wet ingredients, scraping down the sides of the bowl as you work. Pour the batter into the prepared dish and use a large spoon or spatula to spread it evenly.
5. Bake for 35 mins or until toothpick inserted in the center comes out clean. Let cool, then cut into 24 bars.
