Ingredients
- 1 head of Cauliflower
- 1/4 cup Water
- 1/3 cup Mayonnaise Calorie Wise
- 2 Tbsp. Flour
- 1 cup Milk
- 1/2 cup Mexican cheese blend, shredded
- 2 Tbsp. Parmesan Cheese (Light )
- 2 Tbsp. Bread Crumbs

Step 1
REMOVE outer green leaves from cauliflower. Cut off stem to make it level with base of cauliflower. Cut 1/2-inch-deep "X" in base; place, top-side up, in large microwaveable bowl. Add water; cover with waxed paper. Microwave on HIGH 10 min. or until cauliflower is tender. Let stand, covered, 5 min.
MEANWHILE, whisk Miracle Whip and flour in medium microwaveable bowl until well blended. Gradually whisk in milk. Microwave 3 to 4 min. or until thickened, stirring after 2 min. Add shredded cheese; stir until melted.
HEAT broiler. Transfer cauliflower, top-side up, to shallow casserole dish; top with cheese sauce. Mix Parmesan and bread crumbs; sprinkle over cauliflower. Broil 2 to 3 min. or until topping is lightly browned.
