Ingredients

  • 1 packet stir-fry seasoning powder
  • 1/4 cup water
  • 2 Tbs. soy sauce
  • 2 Tbs. lime juice
  • 1 tsp. sugar
  • 1 Tbs. canola oil
  • 1 lb. ground chicken breast
  • 1 red bell pepper, diced
  • 1/4 cup dice water chestnuts
  • 2 Tbs. scallions, thinly sliced
  • Pinch red pepper flakes
  • 1 head romaine lettuce (inner leaves only), or 2 heads of butter lettuce and/or radicchio
  • For garnish: mint, cilantro, bean sprouts, chopped peanuts

Preparation

Step 1

1. In small bowl, combine stir-fry seasoning, water, soy sauce, lime juice and sugar. Set aside.
2. Heat oil in skillet over med. heat. Add chicken and use wooden spoon to break up the meat. Cook until browned, about 10 mins. Add bell pepper, water chestnuts, scallions and red pepper flakes and cook, about 5 mins. Stir in reserved stir-fry seasoning mixture. Cook until liquid evaporated, about 2-3 mins.
3. Serve in lettuce cups garnished with garnishments.
