Ingredients
- 3 tbsp all purpose flour
- 1 tsp salt
- 1/2 tsp paprika
- 1/4 tsp dry mustard
- Scant 1/8 tsp cayenne pepper
- 3 tbsp butter
- 1/2 onion finely chopped
- 1 cup fresh milk
- 2 cups fresh corn kernels
- 1 egg yolk, beaten
- 1 cup buttered breadcrumbs (optional)

Step 1
Preheat oven to 400 F. Butter a 2 quart baking dish. Mix the dry ingredients together in a bowl and set aside. Melt the butter in a cast iron skillet and saute the onion on low heat until clear. Stir in the flour mixture and cook, stirring constantly for 2 to 3 minutes. Add the milk, continuing to stir constantly, and bring to just boiling. Stir in the egg yolk and corn. Spoon into the buttered baking dish. If desired, sprinkle top with the buttered bread crumbs. Bake for 25 minutes or until the crumbs are light brown and a knife inserted comes out clean. Excellent side dish to crock pot pork chops!
