Pan Fried Fish with Dill Rice

The fish with dill rice (sabzi polo) has been a classic dish of the Persian new year (norooz) for many years. This recipe is a twist on this classic dish by adding the refreshing dill sauce. The dill sauce has a cooling effect which will complement the fish and rice flavor.

- Butter: 1 tbsp

- Basmati Rice: 3 cups
- Dried Dill: 3 tbsp
- Vegetable Oil: 1/2 tbsp
- Salt

- Sauce Ingredients:
- Mayonnaise: 1 tbsp
- Yogurt: 2 tbsp
- Capers: 1 tbsp (optional)
- Dried Dill: 1 tsp
- Lime: 1
- Salt

Preparation
Step 1
1. Add water to the the dill rice ingredients and cook them in the rice cooker.
2. Meanwhile, In a frying pan, melt the butter with olive oil. Season the fish fillets with salt and pepper and cook them in the pan on the medium-high heat for 10-15 min or till golden.
3. Blend all sauce ingredients together.
4. Serve the fillets with the rice on side and the sauce on top.

REVIEW:
I cook the rice in the same way but add 1/2 tsp turmeric powder an 1/3 tsp cinnamon powder for more taste. The sauce for fish is tasty and it makes this dry food easier to eat.
