Ingredients
- 1 Tbs. Olive oil
- 12 oz. Lean stew beef
- 2 cups carrots cut into 1-inch pieces
- 1 cup each: parsnips, celery, and potatoes, cut into 1-inch pieces
- 2 medium onions, cut into quarters
- 1/2 tsp. dried thyme
- 2 cups beef broth

Step 1
Heat oil over medium heat in a large pot. Cube beef and brown; drain. Add remaining ingredients, cover and simmer until beef and vegetables are cooked, about 45 minutes.
