  • 1 (15-ounce) can whole kernel corn, drained
  • 2 cups finely chopped cooked chicken
  • 1/2 cup milk2 tablespoons butter, melted
  • 1 egg, lightly beaten
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon cayenne pepper
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder

Step 1

1Preheat 2 inches of vegetable oil to 375F in a deep fryer or medium saucepan.
.2Place corn in a large bowl. Mash with a potato masher until lightly crushed.
.3Add chicken, milk, butter, egg, salt, black pepper, garlic salt and cayenne pepper to corn mixture and mix well.
.4Combine flour and baking powder in a small bowl and mix well. Add to chicken mixture and mix well.
.5Drop by rounded tablespoonfuls into the hot oil, about 3 at a time. Deep-fry fritters until golden, about 3 minutes per batch; drain well.
