- 1 small onion, chopped
- 1/2 green pepper, chopped
- 2 T olive oil
- 3 cups frozen corn or fresh corn
- 2 tomatoes, diced
- 1/4 pound andouille sausage or italian chicken sausage, cooked and diced
- salt and pepper

Step 1
Saute onion and pepper in oil in large skillet for 8 minutes until tender. Add corn, tomatoes, and sausage; cook, stirring often, 15 minutes. Stir in salt and pepper.
