Ingredients

  • 2 sticks butter, softened
  • 1 tsp vanilla extract
  • 1 tsp ice water
  • 2 1/4 cups flour
  • 1/4 cup powdered sugar
  • 1 cup finely chopped pecans
  • 1 1/2 cups sifted powdered sugar (extra for dusting after baking)

Preparation

Step 1

1. Preheat oven to 350 and line your baking sheets with parchment paper.
2. In a large mixing bowl, heat beat the butter with an electric mixer until light and fluffy.
3. Add in the vanilla and ice water and continue to mix.
4. Turn off the mixer and sift in the flour, 1/4 cup powdered sugar and the pecans.
5. Using a wooden spoon, mix until the dough comes together.
6. Roll the dough into 1 inch balls and place onto the baking sheet. Slightly press the balls down to form the cocoon shape.
7. Bake for 12 to 15 minutes or until slightly golden. Allow cocoons to cool completely and then dredge into the remaining powdered sugar.
