Campfire Grilled Bananas

- 1 banana
- 2 t brown sugar
- 1/2 t lemon juice
- dash cinnamon
- 1/2 T butter

Cut the banana crosswise into 1/2-in wide slices and place in the center of an 18-in long piece of aluminum foil. Sprinkle with brown sugar, lemon juice and cinnamon. Dot the banana with butter cut into pieces. Bring the long edges of the foil together and fold them together. Crimp the short ends together above the packet to form a handle; make sure all seams are closed tightly. Use a long stick to place the packet on a warm grill or the coals of a campfire. Let it cook 15-30 mins. Remove from heat, place on a plate and carefully open the foil. Let it cool.
This snack goes nicely with stick-roasted biscuits: simply stretch and coil refrigerated biscuit dough around a bark free stick and roast over the fire.
Also goes well with vanilla ice cream.
