Ingredients
- 1 recipe pastry for a 9 inch crust
- 4 cups fresh blueberries
- 2/3 c white sugar
- 2 T all-purpose flour
- 1 T quick-cooking tapioca
- 1/4 t ground nutmeg
- 1/4 t salt
- 1 T grated lemon zest
- 1 1/2 T lemon juice
- 1/2 T butter

Preparation
Step 1
Preheat oven to 450°. Prepare pastry for 2 crust pies. Pick over and wash blueberries.
Combine sugar, flour, tapioca, spices, and salt; stir into blueberries. Add lemon juice and rind, and let stand for 10-15 mn. Mix well, and turn into pastry lined 9 inch pie plae. Dot wih small pieces of butter. Cover with top crust.

Place pie on lowest rack in preheated oven. Bake for 10 mn. then reduce oven temp to 350°. Bake for 30 mn longer. Server warm or cold.
