Swedish Rye Cookies

- 1 cup butter, at room temperature
- 1/2 cup sugar
- 1 cup light rye flour
- 1 1/4 cups all-purpose flour
- 2 to 3 tablespoons ice water

Step 1
In a large bowl, cream the butter and sugar until smooth. Add the rye flour, then the all-purpose flour and mix until well-blended. Blend in the ice water (adding more if necessary). Gather into a ball and chill.
Cover baking sheets with parchment paper. Preheat the oven to 350 degrees.
Pinch off small pieces of dough and knead lightly to make them workable. Roll out a lightly floured surface to 1/8-inch thickness. Cut into 2 1/2-inch rounds and pierce all over with a fork. With a small round object, cut a hole in the center of each cookie.
Bake for 8 to 10 minutes or until brown and beginning to brown the edges. Cool on parchment paper, or remove from cookies sheets and cool on racks.
