- 3 cups self-rising flour - sifted
- 1/4 tsp chili powder
- 3 oz cheddar cheese, shredded
- 1 cup evaporated skimmed milk
- 2 eggs - lightly beaten
- 1/4 cup ketchup
- 1/4 cup margarine

Step 1
Oven 400
Spray 12 2 3/4" muffin cups with non-stick spray
In a large bowl, combine flour and chili powder. Add cheese; stir to combine.
In a medium bowl, combine milk, eggs,, ketchup and margarine. Add wet ingredients to dry; stir until just combined.
Spoon batter into prepared cups. Bake 20-25 minutes, until toothpick inserted in center comes out clean. Cool on wire rack for 10 minutes
