Smoky Black Bean Nachos

Ingredients
- 1 cup grated Cheddar cheese
- 1 cup grated smoked Gouda cheese
- 2 cups grated pepper jack cheese
- 1 – 15-ounce can black beans, drained and rinsed
- 1 – 15-ounce can whole kernel corn, drained
- 3 medium tomatoes, chopped
- 1 bunch of scallions, sliced
- 1 large bag of corn tortilla chips
- 1 to 2 jalapenos, sliced
- 1 cup of prepared chunky salsa

Step 1
1.Pre-heat your BBQ grill.
2.Combine the cheeses in a medium bowl, set aside. Combine the beans, corn kernels, tomato and scallions in a medium bowl and set aside. Start layering the nachos around the outside of the Blue Jean Chef Flame Multi-Roaster, starting with a layer of tortilla chips. Sprinkle a good handful of the cheese on top and then add some of the bean, corn and tomato mixture. Add more chips, cheese and toppings, repeating these layers until you get to the top, ending with a handful of cheese. Scatter the jalapeno slices on top.
3.Place the Flame Casserole on the BBQ and close the lid. Let the nachos crisp and the cheese melt for about 10 minutes depending on how hot your BBQ is. Then remove and pour your favorite jar of salsa (or homemade) into the center cup of the Multi-Roaster and serve.
*This can also be made in the oven at 350ºF for 15 minutes.
