  • 2 turkey-breast tenderloins (about 19 ounces each)
  • 6 thin slices boiled ham
  • 6 slices Swiss cheese1 medium tomato, chopped
  • 1/2 teaspoon dried sage
  • 1/2 cup bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons dried parsley6 tablespoons butter, melted

Step 1

1Preheat the oven to 350ºF.
.2Cut each tenderloin lengthwise into thirds. Pound to 1⁄8-inch thickness.
.3Place 1 slice ham and 1 slice Swiss on each piece of turkey. Top with one-sixth of the tomato and sage. Fold in two long sides of the turkey. Roll up the turkey, jelly roll fashion, starting at one short side.
.4Mix bread crumbs, Parmesan and parsley in a small bowl.
.5Dip each roll-up in butter. Coat with the bread crumb mixture.
.6Arrange roll-ups in a 13 x 9-inch baking dish. Bake until an instant-read thermometer inserted in center of the roll-up registers 180F, about 40 to 45 minutes.
