Ingredients

  • 4 large carrots, trimmed and peeled
  • 2 tablespoons olive oil
  • 1 teaspoon dried dill
  • Salt and freshly ground pepper

Step 1

Preheat the oven to 325 degrees.

Slice the carrots into 1/2-inch-wide rounds. Heat the oil in an ovenproof frying pan until hot but not smoking over medium-high to high heat. Add the carrots and turn to coat in the oil. Reduce the heat to medium. Add the dill, salt, and pepper and cook for 10 minutes, stirring 4 to 5 times.

Remove from the heat, cover tightly with a lid or foil. Put the pan in the oven and let the carrots cook for about 30 minutes or until very tender.
