Tropical Coffee Cake

Ingredients
- Topping:
- 1 C sugar
- 1/2 C vegetable oil
- 2 eggs
- 1 C (8oz.) sour cream
- 1 1/2 C all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 Can (8 oz.) crushed pineapple drained
- 1/2 C flaked coconut
- 3 TBS. sugar
- 1/2 tsp. ground cinnamon

Step 1
1. blend sugar, oil. Add eggs one at a time, beating well after each addition. Beat in sour cream.
2. combine flour, baking powder and salt; add to the sour cream mixture. Stir in pineapple.
3. Transfer to 9 inc. square baking dish. Combine the topping ingredients; sprinkle over batter. Bake at 350 for 35-40 min. or until toothpick comes out clean. 9 servings.
