  • 3/4 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 egg
  • 4 teaspoons red food coloring
  • 1/2 teaspoon pure vanilla extract
  • 1 cup cake flour
  • 3/4 cup sugar
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon salt
  • 3 pints vanilla ice cream
  • 4 cups whole milk
  • 1 8-ounce package cream cheese
  • Whipped cream

Step 1

Preheat the oven to 325 degrees. Line a 12-cup muffin pan with baking liners. In a medium bowl, whisk the oil, buttermilk, egg, food color and vanilla. In another medium bowl, whisk the flour, sugar, cocoa and salt. Add the dry ingredients to the wet ingredients; stir to blend. Divide among muffin cups. Bake until a toothpick inserted into the center comes out clean, about 30 minutes. Let cool.

In a blender, puree half the ice cream, half the milk, and half the cream cheese. Add 4 crumbled cupcakes and pulse to blend. Divide among 4 tall glasses. Repeat with remaining 4 sets.

Garnish with whipped cream and cupcake crumbs from a remaining cupcake.
