Sweet Potato Pie

Pumpkin pies are always plentiful during the holidays but it's hard to find a good Sweet Potato Pie in your local super market so I enjoy making my own.

Ingredients
- For a 9 inch pie:
- 1-3/4 cup mashed Sweet Potatoes
- 1-1/2 cup Milk
- 3 Eggs
- 1 cup Sugar
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 tsp Salt
- 1 tbsp Butter (melted)
- 9 inch frozen pie crust

Preparation
Step 1
Boil 3 to 4 large sweet potatoes until fork soft. Peel and mash until smooth.
Heat oven to 425*. Beat all ingredients together. Pour into pie pan and bake 45-55 mins or until knife inserted 1 inch comes out clean. The center may look soft but will set as cooled.
Serve plain or topped with whipped cream.
