  • 8 lrg. eggs
  • 1/2 c. milk
  • !/4 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1/2 c. thinly sliced ham, chopped
  • 1/3 c. parmesan cheese
  • @ TBSP. fresh basil, chopped

Cooking time 30mins


Step 1

Preheat oven to 375. Spray two mini muffin tins (24 cups) with cooking spray. Whisk together the eggs,milk, salt and pepper in a large bowl. Stir in the ham, cheese and basil. Fill muffun cups almost to the top with egg mixture. Bake until they puff and are set in center, about 8-10 mins. Using a rubber spatula, loosen the frittatas from the muffin cups and arrange on a serving platter. Serve immediately. Can make ahead of time and warm in a 325 oven about 5-7 mins. Refrigerate any leftovers.
