Grandma had so many ways to use Hot Peanut Dip. She served it with grilled chicken skewers, with broiled chicken pieces and with boiled shrimp. Sometimes she poured it over coleslaw vegetables, then sprinkled a little chopped cilantro and some alfalfa sprouts over it. Occasionally she even mixed it with cooked vermicelli.

Ingredients

  • 1/3 cup water
  • 1/4 cup soy sauce
  • 1/4 cup firmly packed light brown sugar
  • 1 tablespoon chili powder2 cloves garlic, minced
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon hot pepper sauce
  • 1/2 cup creamy peanut butter
  • 2 tablespoons lime juice

Step 1

1Combine the water, soy sauce, brown sugar, chili powder, garlic, ginger and hot pepper sauce in a small microwave-safe dish and mix well.
.2Microwave on HIGH for 3 minutes. Stir the mixture. Let stand for 3 minutes.
.3Add the peanut butter and lime juice to the warm mixture and mix well.
.4Microwave peanut butter mixture, covered, until heated through, about 1 minute.
.5Serve dip hot with favorite vegetables or toasted pita bread.
