MY NOTES: I love this batter - makes wonderful, light, crunchy fried fish! And you really can freeze the extra and re-use it later!

Ingredients
- 1 cup flour
- 3/4 cup cornstarch
- 2 Tablespoons oil
- 3/4 cups water, or more if needed to make a thin batter
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoon salt
- 1 egg

Step 1
Mix together, beating until smooth. This makes a delicious golden brown crust. Unused portion can be frozen for future use. Just defrost, whip it up, and it's like fresh batter.

Worked really well, used this on some True Cod fillets. I found I needed about twice as much water as indicated but otherwise, looks just like the stuff we have to go out for. Or USED to... :-) Thanks for the recipe!
I added 1 tbsp lemon, 1/2 tsp pepper, pinch of sage, 1/4 tsp garlic powder, 1/4 tsp onion powder.
