Swedish Soft Spice Cake

This cake belongs on the Christmas coffee table, which traditionally includes highly spiced baked goods. A special, elongated, fluted mold is used for this cake; however, you can bake it in a fancy tube-type pan.

- vanilla wafer crumbs for coating the pan
- 1/2 cup butter
- 1 cup sugar
- 3 eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 2/3 cup sour cream

Preparation
Step 1
Preheat the oven to 350 degrees. Butter a 9-inch fancy tube-type pan or Swedish spice cake pan and dust with vanilla wafer crumbs.
In the bowl of an electric mixer, cream the butter and sugar until smooth; add the eggs and spices and beat until light and fluffy. Mix in the flour, baking soda and sour cream until the batter is smooth. Pour into the prepared pan and bake for 20 to 30 minutes or until the cake tests done. Cool for 5 minutes in the pan, then turn out onto a rack to finish cooling.
