Step 1

1For biscuit mix, combine flour, baking powder and salt in a large bowl and mix well. Cut in shortening with a pastry blender until particles are fine. Store at room temperature in an airtight container.
.2For 12 biscuits, preheat the oven to 450ºF.
.3Place 2 1/2 cups biscuit mix in a large bowl. Add milk gradually, stirring constantly. Stir just until blended.
.4Knead the dough on a lightly floured surface until well mixed. Roll into a 1/2-inch-thick circle. Cut with a 2-inch biscuit cutter.
.5Arrange the biscuits in a 13 × 9-inch baking pan. Bake until lightly browned, about 12 to 15 minutes.
