Ingredients

  • 2 large Granny Smith apples, thinly sliced
  • 1 tablespoon cinnamon sugar
  • 1 teaspoon lemon juice
  • 7 tablespoons butter, divided
  • 6 (6-inch) flour tortillas
  • 7 tablespoons butter, divided
  • Vanilla ice cream and caramel topping for serving

Preparation

Step 1

Combine the apples, cinnamon sugar and lemon juice in a medium bowl and toss to coat.


Melt 1 tablespoon butter in a medium saucepan over medium heat. Sauté the apple mixture in the hot butter, stirring continually, until the apples are tender, about 5 minutes. Remove from the heat.


Spoon equal portions of the apple mixture onto each tortilla, then fold in half to enclose the filling.

Melt 1 tablespoon butter in a large skillet over medium heat. Cook 1 quesadilla in the hot butter, carefully turning once, until golden, about 2 minutes per side. Remove to a dessert plate. Repeat with the remaining butter and quesadillas.

Top each serving with a scoop of vanilla ice cream. Drizzle with caramel topping. Serve immediately.

Grandma's Secret Tip:

When Grandma was really in a hurry, she used one 21-ounce can of apple pie filling instead of cooking the apples in Step 1. She just warmed the filling before spooning it onto the tortillas.
